A fine dark chocolate bar created using Ocumare, a Criollo cocoa grown in a village of the same name found on the coast of Aragua, Venezuela. The village is run as a cooperative and farmers carefully retain the spicy nature of the Ocumare cocoa with slow conching. This chocolate provides notes of pepper, caramel, nutmeg with an acidulous top edge whilst retaining a bitter undercurrent.
