Caramel, toffee and all things caramalised and sweet. Very little malt flavour so a contrast perhaps with Amedei's milk chocolate bar which contains noticeable malt notes. The 40% cocoa content, whilst not unusual nowadays in fine milk chocolate, certainly raises this way above the overly sweet, milk chocolate candy variety.

Pure cocoa with no other ingredients whatsoever and so as raw as it gets. A very dry, bitter taste due to the absence of sugar and most would perhaps not consider this chocolate at all. How wrong they would be, this is more chocolate than they can probably handle.
